The Proceedings of the 2027 International Conference on Food Science, Nutrition and Human Health will bring together original scholarly contributions addressing current developments and emerging challenges across food science, nutrition, and human health. The proposed volume is intended to provide an interdisciplinary platform for research from academic, clinical, industrial, and public-health perspectives, with particular emphasis on the relationships among food composition, processing technologies, dietary patterns, nutritional status, disease prevention, and population well-being.

The proceedings are expected to include research on food chemistry and microbiology, food safety and quality, functional foods and bioactive compounds, nutrition across the life course, clinical and public-health nutrition, dietary assessment, precision nutrition, sustainable food systems, and innovative technologies for food production and analysis. Priority will be given to contributions that connect scientific evidence with practical applications, policy development, and strategies for improving individual and community health.

Through the dissemination of recent findings, methodological advances, and interdisciplinary perspectives, the proposed proceedings aim to encourage collaboration among researchers and practitioners and to support evidence-based responses to global challenges such as malnutrition, diet-related chronic diseases, food insecurity, population ageing, and environmental sustainability. Upon publication, the volume is expected to serve as a useful academic reference for researchers, educators, health professionals, policymakers, and industry specialists working at the intersection of food, nutrition, and human health.
